A working space
It is a popular idea and it is entirely doable, provided it is arranged rather than attempted during a busy hour.
The two things that decide whether it works are the time and the permission, and they are related — most places are far more relaxed outside their busy period.
Asked, a café will frequently suggest a quiet hour and a corner, which is a better outcome than anything achievable by turning up and hoping.
The other consideration is what ends up in the background. In a working space that includes other people, and a portrait with strangers behind it is rarely the portrait anyone wanted.
The studio removes all of it, and remains the simpler option where the photograph has a formal use.
It is worth asking the venue whether a small light stand is acceptable, because that is the detail that usually decides how good the result is.
Many spaces are relaxed about photography and less relaxed about equipment in a walkway, which is a reasonable distinction.
Told what is acceptable, we work within it. Told nothing, we bring less than we might have and the portrait is the poorer for it.
The studio has none of these constraints, which is why formal portraits usually end up there.
It is worth doing this at a time when you are not about to do something else.
Portraits taken in a gap between meetings look like portraits taken in a gap between meetings, and no amount of technique disguises it.
Half an hour with nothing immediately after is a small ask and it is visible in the result.
