The decision nobody makes in time
A photograph meant for a wall is not the same photograph as one meant for a phone.
It is the same subject, the same room and the same session. It is not the same frame, and the difference is decided in the half-second before the shutter rather than at any point afterwards.
Cropping only ever takes away. It cannot add space at the edges of a frame, which means a group photographed tightly can never become a wider one, and a portrait shot without headroom can never satisfy a specification that requires it. Enlarging a heavily cropped image is exactly where it falls apart.
So the useful question at booking is not only what we are photographing. It is where these are going: a wall, an invitation, a listing that will be seen first as a thumbnail, a portfolio spread with a gutter running down the middle of it, or a gallery that will live on a phone.
Each of those wants something slightly different, and covering more than one is genuinely cheap while everything is already set up. It is only expensive afterwards, when the answer is that the frame you need was never taken.
And if you have not decided, that is a perfectly normal answer. Say so, and we will shoot for more than one outcome rather than guess at a single one.

Does it really matter where the photographs will be used?
More than most people expect, and it is the one thing that cannot be fixed later. A frame meant to be printed large needs room around it; a listing thumbnail needs a clear subject that survives being shrunk; an invitation is often upright while a screen is wide. All of that is decided while shooting.
We have not decided yet.
Then say so and we will cover more than one shape while everything is set up. It costs a couple of extra frames rather than a different session, and it is far cheaper than discovering the gap afterwards.
Can a photograph not just be cropped later?
Only if there is room in it to begin with. Cropping always takes away — it never adds space at the edges — so a tightly framed group cannot become a wider one, and enlarging a heavily cropped frame is exactly where it falls apart.
What do most families actually do with their photographs?
Honestly, very little. Most galleries are looked through once and then live on a phone. The families who end up happiest are the ones who decided in advance that one or two frames were going somewhere specific.
