The conversation worth having first
You receive a chosen set, not everything that was taken.
Any session produces a great many frames that are a blink, a blur, a hand across a face, or the same moment three times over. Those are attempts rather than photographs, and choosing between them is a real part of the work.
Handing all of them over would not be generous. It would be giving you the job instead of the result.
Nothing is held back that is worth having. If you look through a set and something feels missing — a particular person, a particular moment, more of one setup — say so and we will look again. That is a normal request rather than a complaint, and it is far easier to act on soon after a session than months later.
We do not quote a number of photographs, and we would gently suggest being careful with anyone who does. A number tells you very little: twenty near-identical frames is not more than five distinct ones. The useful question is what the set will cover — which people, which parts of the day, which rooms, which angles. That can be agreed in advance and checked against before delivery.
On timing: it depends on the size of the shoot, and it is confirmed with you in writing when you book rather than left open. Ask for that in writing from anybody you are considering, along with what is covered, how many photographers are coming, and what happens if the day overruns.
None of those are difficult questions. All of them are cheap to answer now and expensive to argue about afterwards.

Do we get every photograph taken?
No, and you would not want them. Any session produces a great many frames that are a blink, a blur, a hand in the way, or the same moment three times over. Those are attempts rather than photographs. You receive the selected, edited set — the ones that worked, without the near-misses beside them.
Is anything being held back?
